Building a database of patient data will be very useful, but you must seek permission of the patients. Using this data, it may be possible for researchers to use machine learning and extract useful information.

That depends on what it is that you want to find out- for example the frequency with which patients access the service, the impact of the service on related health behaviours or the emotional impact of the consultation. Whatever it is that you want to find out will drive the methodology required.
