I extracted ivy gourd fruit powder with 80% ethanol using sonicator, the total volume is around 100 mL. The solution was evaporated with vacuum rotary evaporator about 40 minutes, freezed and dried with vacuum freeze dryer at -50 c for 24 hrs. The problem happened when my sample doesn't dry into powder, but it present as a sticky substrate instead. What should I adjust to solve this problem.

It deponds on the nature of the compound that is extracted. It is not necessary to be a dry powder. You can use a known quantity of the sticky materials for further analysis.

Probably you have extracted sugars that give you such a sticky nature of your extract. To help you more could you indicate please what are you working with? I mean what you are planning to extract from this matrix?
