As You mention that you want to work in large spatial scale with Sentinel or Landsat data,

So I will highly recommend you to use Google earth Engine ( https://developers.google.com/earth-engine/ ), its cloud computational platform.. Its very powerful tool for large temporal and spatial scale analysis.

GEE is an effective appricah. EnVI is also useful. You can find many soil salinity spectral indices in previous publications.

Both Landsat and Sentinel could be used for soil salinity mapping. It is better to used salinity indices specifically derived from visible bands. You can check below article
