To calculate Sulfur amino acid (SAA) in amino acid score, Methionine + cysteine is well known.
However, sometimes, I got a result of amino acid profile. It show only cystine (C-C). The question is that can I use cystine as cysteine in the formular.
However, some company provides both cysteine and cystine values. So, SAA is methionine + cystine + cysteine ???

cystine is a bi molecule of cysteine.
In the quantitative analysis of cystine and cysteine, before hydrolysis the compounds are often oxidized to cysteic acid with performic acid. So both are included in score. Cystine can also be determined individually so. Methionine, cysteine+cystine are also reported
