Unusually I don´t fast my mice before sacrifice them, but it depends on what you want to check on your study. Mice usually don´t eat during day time, they eat at night and sometimes a litter just before lights are turned on, so if you sacrifice them in the morning mice will be at a basal fed state. This means, basal glucose, insulin and all metabolic parameters. Typically I withdraw the food one or two hours before starting the sacrifice, so mice do not eat during the processes and there are no big differences between the first and last mouse.

On the other hand, if you want to analyze a specific mechanism that is impacted by glucose metabolism you can fast the mice overnight.

Nevertheless, if you are doing tissue cultures and keep them for a period of time, fasting does not make sense since you will provide a cell culture medium, probably a complete one.

Generally, you don't need to fast your mice before sacrifice them, except your purpose is to check a pathway that affected by the glucose metabolism

Usually, I sacrifice my mice in the morning, around 9AM-11AM. Just try to sacrifice your mice in the similar time during your whole project to eliminate the circadian clock factor that can affect whole body metabolism.
