As for my case, I used game-based learning in my subjects/courses. Also, I used online simulations, article analysis, and technology-integration model in teaching.
I‘d always love the idea of getting my students to explore the topic themselves and let them present their findings using their own way. I would divide the topics at the beginning of academic year and give them opportunity to share their findings weekly. They can choose between slide presentation, scrapbook, pamphlet or video making and it’s interesting to see the advanced students’ work who mostly came out with creative projects.
At the same time, I also have a few classes with very weak students who can’t read or write without guidance and it’s very hard for me at the beginning to bring them up to the level they’re supposed to be at by this age. Hence, I tried much simpler and easier projects like word search puzzle to introduce words related to the topic, jigsaw puzzles to increase their familiarity of diagrams in the topic and crossword puzzles for group work problem-solving with the help of some clues.

It might not be easily applicable to every context, but I focus on submitting non-disposable "homeworks". That is, I ask students to produce material to be published as OER, that can be used and improved over and over by other students. This proves to be very motivating, especially when the material is used by other students in different countries.
