I am looking for research relating to the recycling in Prato, Italy and I am concerned there may be more research out there than I have found, particularly in Italian. If anyone knows or has done research in this area please let me know.

I don't know what you've already found. As it is widely mentioned online, it seems that they are well-known for recycling wool, textile, and water (fyi: they also produce about 3% of European textile). There are many links available, below are a few examples:
