Hello, I would like to get a read out of pixel location and intensity to analyze an MRI image. Does anyone know a plugin that can do this?

What exactly are trying to do? Just readout of a single pixel is indeed easy to get:
Select the Point or Multipoint roi tool, select the pixel and hit m (or Analyze/Measure). A results table will pop up containing the information you asked for.
