Steroids are a very complex class of compounds (metabolites) including oxysterols, vitamins, bile acids and sex hormones.
Please note there are slight structural changes to animal steroids and plant steroids. The equivalent of cholesterol in the plant kingdom is sitosterol (class of phytosterols).
As you can imagine all these different compounds have different structural features and these govern the physical properties of steroids such as solubility. Unless you´re interested in profiling one single class of steroids (which you do not specify in your question), it might be worthwhile to spend some time understanding what is the solvent with the best extraction performance, as well as other crucial details such as matrix effects, before implementing a routine LC-MS analysis.
