If anyone can please advise me if I can justifiably use a 1-way ANOVA vs. a 2-way ANOVA.

We are interested in the effects of alcohol exposure on individual zebrafish auditory organs. Can we justify using a 1-way ANOVA since there was only one factor that could be making the sizes different (alcohol exposure at different times periods)?

For each fish we measured body length, vesicle size and ear stone size at 3 time points.

We ran individual 1-way ANOVAs for individual parameters on each day (3,5, and 7 dpf). 

We were not interested in differences between days (i.e. between 3 and 5 dpf and/or between 5 and 7 dpf).
