Immediately after transforming competent cells with a plasmid ordered from Addgene, I began growing a mini prep culture (5ml) overnight. Next morning, I pelleted the cells and put them in the fridge instead of -20. They will be in the fridge for 48 hrs before I am able to perform the mini prep. Will the plasmid be compromised since the bacteria are being stored at 4C instead of 20?

Should be fine. We often leave an active culture (not even pelleted) several days in the fridge before the miniprep without any problems. Of course, verify your extracted plasmid at all times (sequencing or restriction digestion).
Agreed, it should be fine. However for next time this happens, if you put the pellets in the freezer you will certainly not have any problems.
