Are metal melts considered Newtonian or non-Newtonian? If they are non-Newtonian, do you know which kind of non-Newtonian fluid they are?
I know that we can do water modeling for some metal melts, like steel. but is it correct assumption for every metal melt? and for every condition?

We did water modeling for melt calcium metal. It should works pretty good as an estimation to flow rate. The viscosity of calcium is a constant.
So in general, most molten metal should be Newtonian, whose viscosity can be find from many references. My paper has a reference can direct you to the metal viscosity.

Almost all fluids including metal melts that we encounter in our daily life are non-Newtonian. Metal melts could exhibit both time-independent (but stress-dependent) and time-dependent (when sheared at a constant rate) properties. And sometimes they display a mix of both types of behavior. I guess you could find plethora of resources online; depends on what metal melt you are interested in.
