Thiessen Polygons method only is better for valley and flat land in my experience, if you have a dense rainfall station are available then you can use normal or Isohyetal method for better rainfall analysis in mountain and high elevation area.
I agree with Amrit's answer. However, you might want to check the spatial variability of the precipitation. If the variability is high then you do not want to use the Thiessen polygons method.
Please let me know how to perform UK method and how to derive lapse rates. I have no idea. Please share youtube or any other step by step guidelines, if available.
