In my personal opinion both Hirshfeld surface analysis and crystal structure determination by single-crystal XRD require personal teaching and practical supervision. Both topics are too complex to be learnt online or by reading a few tutorials. If I were you I would contact colleagues at your institution who are experts in this field and ask if they give courses and can perhaps teach you individually.
