Hi Akshay. Not from pdf files , but from imagen files, you can use the cut tool of windows and cut the desired graph in the pdf file; then with the "Get Data" software, you can extract the points of the curve as a data file

Try and check out Octoparse, Power Query, Tabula but I think it will make them CSV file which can be used in Excel or ported to any other platforms
