Have you tried Unity (unity.com)? I don't know if it supports speckle but we have used it successfully to render a 3D environment for simulations that involved multiple cameras.

Maybe you can use a general purpose robotics simulator, like Gazebo, where you can create a scene and add two cameras and capture images. Then, add the speckle in a post-processing step

Cinema 4D (c4d) allows you to generate any texture, add it to an object and simulate stereo pairs. Although it’ animation software, it does allow you to set and control many details on the simulated camera pairs and their trajectory.

I agree with the idea of using unity. It is easy to add how many cameras you need and also includes several image effects. The noise and grain effect could be used to simulate the speckle noise in the images. You could check the next link.

Another alternative is to write a shader in the project for simulating the speckle noise.

That's a relationship from spatial point set and stereo-vision calibration parameters to a pair of planar point sets. Two questions should be considered carefully. The first one is whether these spatial points distributed on an analytic surface in your simulation data. The second one is which gray interpolation algorithm are you selected or designed because that's different from pure 2D interpolation when the effect of light and shadow is considered locally.
