As you know, there is a paper with the title "Z-Source Inverter" which is published in 2003 by Professor Peng. In this paper, the method of voltage control for Z-source inverter is proposed. I have attached a file for you in which you can find how to simulate the presented method by Peng, in MATLAB Simulink.
for controlling the voltage you should reduce the switching time of the Z-source inverter. also it is having a closed loop control method using P,I,D,PI,PID,these controller will compare the output of the converter with the input.you should select the hybrid signal as input for this type of controller like step,ramp,parabola etc....
also in MATLAB 2013 having a demo model you can study and modify the circuit.
In basic Z source inverters, there will be a shoot through mode which determines the output boosting.and this mode is achieved by comparing the triangular with a constant dc.So you can change this dc reference by comparing output and required output and with a PI controller
