Basically, the cooling after pasteurization is essential in order to limit the growth of the survived microbes;
So, how long time (the survived microbes existing in milk which exposed to the atmosphere) does it to recontaminate the pasteurized milk?

There is no chance of survival microbes after pasteurization . The cooling is done only to keep the milk for longer period of time or upto the consumption..
Pasteurization is a heat treatment designed to destroy the pathogens from the food. But spoilage causing may remain in the treated food. To create bacteriostatic conditions, treated food is cooled. This restricts the growth of microorganisms. Storage temperature decides the shelf life of pasteurized food. Increase in storage temperature will increase bacterial growth factor which result in quick spoilage of milk.
