I'm considering using the free student version of QuickField (quickfield.com) to model electric field lines of a simple 2D representation of my electrospinning setup. Is this a decent application for the job, and, can you point me to an example that would be a good starting point?

Are you still interested? I hope that you already found an answer. But yes, QuickField may be used for simple 2D simulations and for complicated too (if you buy full version).
Also you can try COMSOL Multiphysics. As for me both programs are rather useful and not so difficult to work with. You can just check youtube guides for electrostatic modelling and this will be enough for a start
