It can be a good electrode but has 2 contradicting issues - will it be conducting enough to maintain supply of charge carriers when ever needed and will it be insulating enough to avoid short circuiting the electrodes. There are reports of using Graphene and PEO as electrodes. Please check Prof. Yi Cui's website from stanford. He is an expert in polymer - metal oxide and polymer carbon based LIB devices
