I am looking for researches / papers that have already dealt with soil exhaustion conditions simulated in vitro (without soil, therefore not in vivo or in pot) for eco-physiological purposes, specifically to perform in vitro germination tests.

Normally you add a nutrient mix to in-vitro cultures. Depending on the plant, that you are giong to study, you can modify the nutrient concentrations in the mixture or even use a mixture without certain nutrients.
Certainly you can not simulate degradation of polymers in soil, like
clay, humic acids or others or physical degradation with in-vitro media.
