I measured the DV by presenting the participants two product options where they had to choose one of them. I repeated this 20 times. After that I calculated the percentage value of choosing the product option left instead of right for each participant. Is it possible to use this percentage value as a DV for conducting a mediation analysis with process? Do I need to transform the value and do I have to be careful when interpreting the results of the analysis? Thank you in advance!

you got many participants, and each of your participants undergo 20 measurements on selection of products, so you got a % on each participant, and now you want to choose it as a DV.
In my opinion, you can use it as DV directly. transformation only needed according to the regression model and data distribution. and in your case, i don;t see you need to do transformation
