Why is the concept of in vitro to in vivo extrapolation not often discussed in the field of nutritional sciences as it is in pharmacology and toxicology? In other words, if it was found that a certain level of exposure to a certain nutrient results in significant cellular effects, why is it not often discussed how to extrapolate the dose to the in vivo conditions?

I could not find any references for such topic in the field of nutrition.
