I think it refers to the need to preserve the artisan labor, not everything is done on automatic machines. Yesterday I listen that Italy's main export is luxury items, and these items are made with slow manufacturing.
For mainly automated production there is a lot to be found (such as scientific journals on production and logistics), but I suspect there is much, much less for specialized production, where artisans are involved, UNLESS the time and other resources that are required for this mainly manual labour can be estimated somehow. If you can estimate these resource requirements, then you can include those "processes" into a mathematical model. At least it sounds possible.
