Hi People. Please, I need to know which is the best material to make the guideline plate in a hot rolling grinding ball machine.

Material selection depends on the temperature seen by the guide plate in service, and other criteria such as cost, wear and accuracy. Unless you specify these criteria you will not receive anything other than general comments (or nothing at all).
Tool steels that are used in hot forging dies may be an option to consider, but to arrive at a definitive selection you need to specify many more parameters.

The production is 1000 kg/h. The temperature of the bar is 850 °C.
The material is SAE 1082 steel.

This material have excellent temperature resistance, but what about the wear resistance at high temperature?
I think, given the data on the .pdf, wear resistance will be a design parameter for the materials.
You will need to speak with the manufacturers directly to obtain more detailed property data, particularly hot hardness which will give you a good comparison between difference materials with respect to their ability to resist wear.
