I am studying solid-liquid phase transition of lipids as function of temperature. In DSC micrograph, which points, either onset point of melting or melting peak, would indicate melting point. For example in case of lauric acid, the difference between two remains around 3-5 C i.e. melting onset at 43 C and peak at 47 C. Literature reports lauric acid melting point to be around 43.5 C. Are there any other factor that can be helpful regarding solid-lipid phase transition of lipids? Thank you
