In case of 3 electrode people use GCE as current collector whereas SS or Carbon cloth as current collector for prototype device. Why?

When we perform three electrode study we usually use glassy carbon electrode as current collector. But we generally use SS or carbon cloth as current collector for actual two electrode prototype. Why do people do this?
