I had to do this for a publication that used Harvard style. Interviews were anonymous so i had each interview subject deidentified to “Participant 1”, “Participant 2”, etc. So in-text I would quote the subject and then just put in paranethesis (Participant 1). OWL explains how to then correctly cite it in the references section with interview date, location, etc. Hope that helps!
In your text, you can simply use your interviewees' names or deidentified labels (e.g. Respondent 1) and then quote them. In your references, you can use the following format:
Name of person interviewed. Interviewed by: Name of interviewer (Date).
