I would like to analyze a fermented food product (microbiological and physicochemical analysis), I wonder how I will transport it, at room temperature or in a cooler?
Yes..you will need to sample aseptically (in sterile containers) and transport your samples in an iced cooler box and analyze within at least 24 hours. the faster you do the analysis the better the results and the more they will be truly representative of the original sample.
In order to get reliable results and bacterial counts, you should carry food sample at low temperature wherein you are expecting biochemical, enzymatic and/or microbiological changes at relatively high temperature. You can achieve low temperature either by keeping your sample in a refrigerated box or an insulated box with ice cubes. Ensure that melted ice does enter into your sample. Ice made up of potable water is good. Or you can use reusable gel ice available in market.
