Bile salts are ionic detergents. It's possible that it inhibits the enzyme by denaturing (unfolding) it.
Dear Adam Sir, as there are many research published in vitro simulated digestion using bile salt and making biopeptides showing glucosidase inhibition properties, so i am confused as it may also depend upon the bile salt supplied by the company
The concentration of the bile salt is likely to be an important factor.
