I have contacted several Australian institutions but none could help me so far. I would need bathymetric data in the near vicinity of the coastline and of the bays where the inlets are (nearshore data). Data could be in either "x,y,z" format or lidar data. I would be grateful if anyone could lend me a hand or if anyone knows if it is possible to find such data at all.

State governments may sometimes have this data publicly available or made available upon request. I know that the NSW government does have some bathymetric data and also has two open data portals that may have this information: https://data.nsw.gov.au/ and http://data.environment.nsw.gov.au/. The data.nsw portal also has links to a number of other data providers which may have something of use for you: https://data.nsw.gov.au/links. However if the data you're looking for isn't on the website I recommend contacting the data broker as they may still be able to provide it for you.
Geoscience Australia may also have some of this data: http://www.ga.gov.au/data-pubs.

As already mentioned by Braiya, bathymetric data for estuaries and creeks in NSW can be found at the webpage of the Office of Environment and Heritage (OEH). http://www.environment.nsw.gov.au/estuaries/list.htm
There may exist more data of smaller tributaries, which are also collected by OEH. E.g. I requested and received data for tributaries Mullet Creek and Macquarie Rivulet in Lake Illawarra, which are not published online.
If you find similar webpages for other estuaries, e.g. Northern Territory, I would be happy to know about them, because I will soon start modelling tides up there.
