I do not know ArcGIS hypsometry tools, but I can contribute three suggestions:

i) use an open source GIS, e.g. SAGA GIS, to do the analysis. You can import .asc-Grids; SAGA has an own module to extract the hypsometric curve. The result is a table, which can be used to create a diagram.

ii) export the raster dataset as *.asc file. Now import this raster dataset in R and do the analysis e.g. with the hydroTSM package (see http://www.rforge.net/doc/packages/hydroTSM/hypsometric.html) or

iii) export the raster dataset as *.asc file, remove the header (the first 6 or so lines containing information like cell size, nodata value, number of rows/columns, x y coordinates) first or read the file directly in R (skipping the header rows, using the nodata value as NA). Then, you can do the analysis yourself by calculating relative elevation and its cumulative frequency distribution. If the dataset is not too large, opening the asc file in Excel and calculating the data for the hypsometric curve should also work.

I don't know if this will be helpful to you, but I'll offer it just in case:

I've been calculating stage / area / volume relationships for lakes using ArcGIS for a while now, and the general method is as follows:

1) Create a model of the lake or floodplain, up to maximum stage, as a Raster. I generally do this with the TopoToRaster. According to ESRI's help page on the subject, "The Topo to Raster tool is an interpolation method specifically designed for the creation of hydrologically correct digital elevation models (DEMs). It is based on the ANUDEM program developed by Michael Hutchinson (1988, 1989). See Hutchinson and Dowling (1991) for an example of a substantial application of ANUDEM and for additional associated references. A brief summary of ANUDEM and some applications are given in Hutchinson (1993). The current version of ANUDEM used in ArcGIS is 4.6.3."

2) Run SurfaceVolume on the model for all the levels / intervals desired. I automated the SurfaceVolume function to provide surface & volume results at multiple elevations at a specific interval using a python script based on one given at (http://gis.stackexchange.com/questions/15895/volume-of-water-in-a-basin-with-reference-to-incremental-height-of-dam) . You could also use the PolygonVolume tool, I suppose: (http://help.arcgis.com/en/arcgisdesktop/10.0/help/index.html#//00q90000003q000000)

3) I then brought the results into Excel to develop the stage/area/volume relationship. Although I was more interested in showing the stage/area/volume relationship graphically, I believe you can derive the polynomial function describing the curve with the LINEST function.

You can add CalHypso in ArcGIS 10. You just need to start ArcMap 10 as administrator to be able to see the added CalHypso.dll module in the add from file. You then drag it and drop it in any location in the menu bar. Another option is TecDEM, which works under Matlab. I'll explain it to you if interested.

I installed the toolbox developed at the institute of GIScience, SFSU and it works fine with ArcGIS 10. Probably you need to do all installations with adminstrator rights. install CalHypso as I described it above and it will work.

There is a MATLAB toolbox called TecDEM, I use it to extract the hypsometric curve and you can download it, and the manual as well. the condition for that is to use the DEM in Geographic projection and it should be Geotif, and I advise you to prepare it with ENVI.

You can also use ArcSWAT model which is freely available from http://swat.tamu.edu/ and is a ArcGIS extension. Install the required ArcSWAT version as per your ArcGIS version and add it into ArcGIS 10 just by following" Customize>Toolbars> check the box ArcSWAT". There is a "Watershed Delineator> Automatic Watershed Delineation " option which will be available after "SWAT project Setup". SWAT project setup is nothing more than to specify the location to save your project. In "Automatic Watershed Delineation" option you don't do any hard labor except to browse the location file of your DEM and choose some information which are self explanatory. After completing Automatic Watershed Delineation process, in the same menu bar (i.e. "Watershed Delineator") Watershed Reports will be highlighted. Open it and you will get 3 column report namely Elevation, Area under Elevation and % of area under that elevation. From this topographic report you can create your hypsometric curve easily within a minute just using Microsoft Excel.

One more way to get hypsometric integrals, very quick, though not automated, if the number of integrals you have to calculate is not too high: export the table of a watershed's elevation raster in dbf format, calculate the cumulated number of pixels above each elevation value in Excel, normalize your values, and use Grapher (from Golden Software) to draw the hypsometric curve. You then instantly obtain the corresponding integral value by using the 'calculate area' function of the 'graph' menu.

Start ArcGIS as administrator

Go to Tools, customize, command, and add. Search for CalHypso.dll where you copied it (c:\Program Files (x86)\ArcGIS\Bin); it will then show up. Drag it and drop anywhere in the menu bar of ArcGIS, and its done

One more suggestion:

The free software SAGA GIS has a tool to quickly compute the tables you need for (i) visualising hypsometric curves and (ii) hypsometric integrals. The tables already contain relative (or absolute, if specified by the user) elevations and areas. Once you created the tables using the tool, you can easily work with them using Excel or any other table calculator software.

The hypsometric integral (HI) is one of the most commonly used measures that geomorphologists use to describe the shape of the Earth’s surface. A hypsometric integral is usually calculated by plotting the cumulative height and the cumulative area under that height for individual watersheds and then taking the area under that curve to get the hypsometric integral. In a GIS hypsometric integral is calculated by slicing watersheds into elevation bands and plotting the cumulative area for each band. Due to the iterative nature that is required for calculating hypsometric integral, it tends to be one of the harder to calculate watershed variables, and thus the need for an automated tool. The hypsometric integral (HI) is one of the most commonly used measures that geomorphologists use to describe the shape of the Earth’s surface. The geologic stages of development and erosion proneness of the watersheds are quantified by hypsometric integral.

If for any reason you are not satisfied with the responses above or if, like me, you don't like black-box point-and-click solutions; I have developed a neat R script that will accept as input the DEM of your area of interest and the delineation of your sub-watersheds. The script then iteratively calculates the hypsometric curves for each of the sub-watersheds and outputs a summary table that contains some interesting statistics about those sub-watersheds including their respective Hypsometric Integrals.

I have not yet published the code but I intend to soon. Until then, please contact me directly.
