The answer is yes : I suggest you have a look at multinomial logistic regression or one versus all strategies.  Note that, if you have some ordinal target variable (for example, Q : Are you fine ? A : 1: Not at all, 2 : Not really, 3 : So so, 4 : Quite good, 5 : Great ), it might be more interesting to use what is called an ordinal logistic regression which is the same thing as binary logistic regression except that instead of a unique thereshold which determines whether you are 1 (above) or 0 (below), you have several thresholds (Nn classes - 1 to be accurate).

Yes of course you can use depending on the outcomes of dependent variable. If your response have only two categories like success failure you can use Binary logistics regressions, whereas if your response has more than two categories you can use either multinomial logistic regression or ordinal logistic regression depending on the scale of measurements..

The answer, as mentioned above, is either Ordinal Logistic Regression or Multinomial Logistic Regression.

As Geoffery told u can use multinomial logit. if the values of dependent value reflect order (eg 3 best, 2 - better, 1 good) use ordinal logit. but be careful in interpretation as it differs based upon the software used. some moves from 1 to 3 and some from 3 to 1.
