One way is to make a research project in co-promotio with animal producers, a meat industry, consumers group or association and a meat research centre, studying animals in several fields since the "farm to the fork".

Not sure whether you are familiar with the basic concept of value chain. If not please start with search for literature on value chain and also on application of the concept in livestock and meat value chain. Search the web using key words value chain, meat value chain, livestock value chain etc. 

Then figure out how to design your study and who can be partners.

Studying a value chain is more complex than it seems and thus requires focus. What are you going to study in the value chain? Contractual relationships, the nature of information flow, profit sharing, or the power dynamics. Also, think of the different stages in a value chain. Are you going to focus on dyadic relationships Between two actors) or more stages? The latter is more complex unless you plan to do qualitative study. Finally, you need to think of the theoretical framework. In a value chain study, you can use the Transaction Cost Economics perspective (Oliver Williamson) and the Global Value Chain (GVC) perspective proposed by Gary Gereffi  et al. The latter approach is suitable if the value chain under consideration involves small-scale producers and international buyer(s).

Why do you want to do this? How is it going to affect policy? If it doesn't change anything it is a waste of time. Build your research around this, asking these questions all the time.

My papers on market margin analysis killed this kind of research for a generation - bad methodology. And my 1986 paper showed market price information was abysmal. But bad ideas keep resurfacing. And they need knocking on the head again.

Bear this in mind and you can do something good.

As a reference point one can see the concept of chain value as the set of actors and activities that generate added value to the product, through processes, links, information, knowledge, resources, logistics and marketing (which includes product, price, place and promotion), from the stage of production to consumption and includes any activity going back or forward from the stage of processing.

Of course in our experience when rural producers work in networks and support each other with their experience and knowledge, and also get to work with experts in areas of industrializing, and marketing the meat in different presentations, for instance, dried meat they get better results.

And of course professor´s Bowbrick answer is important, because he contemplates policies, nevertheless, small producers are demonstrating that when they work together and incorporate in a newtork they are attaing better results and negotiating better with institutions.
