Anthocyanins are known for their natural color and they may be used in place of synthetic indicators. I want the standardized method to quantify anthocyanin content.
It is depending on the purpose of your anthocyanin qualification, the sources of samples (eg. leaves, roots, grains) and the equipment available; however, either or both methods may be used, i.e. pH differential method (AOAC method) by spectrophotometry, and validated high performance liquid chromatography (HPLC). If you want to achieve better specificity (which types of anthocyanins to quantify) and sensitivity, the second method should be the choice.
