In preparing hydrolysate from muscle protein do we need to does the flesh of the muscle need to be heated first or can we just go straight away adding the enzyme used before the incubation?
It depends. If you want to control your process, Degree of Hydrolysis, peptide molecular weight, you need to deactive enzymes in muscle, then add commercial enzymes. If controling is not important, and if you are in industry, you can add enzymes to un heat treated muscle.
