I am an undergrad engineering student who is starting to participate in writing thesis and science papers, I have the interest of going with energy engineering related topics, ranging from energy production, transition, controlling and managing to RENs and energy sustainability, How to start and pick up my specific topic?

The subjects you raised are very interested. I recommend you to think about geothermal reservoirs. Hot dry rock technology in geothermal reservoirs is a unique subject, that you may go with.

I guess that I will give an answer a little bit different from the others, but I think than can be a good pathway to clarify your ideas.
Probably you saw an interesting resource called 'word cloud': when you can use data mining in different papers (abstracts at least) in order to discover the most used words in a graphic way. I suggest you to separate the abstracts from the papers that you most liked (at least 10 or more from the main areas that you listed) and follow the instruction below to produce the 'text cloud' using Orange (it is free and runs in different platforms, very high level and easy tool). Then, you can see the most used terms in a highlighted way and you can decide to where to go in your study. If you use state-of-art papers, then you can see crystal clear the tendency of the researches that have been done until today. Moreover, if you use the authors and the citations, you can identify the main researchers, their affiliations and the most referenced articles.

Good Luck dear @Ahmed Badawi. You must reading many articles in your topic and here in RG. This can help you to develop your problematics.
I'm a practicing professional engineer, not an academic, so I approach this differently than some. Your course work covers 'what is known to be required' by the last generation of engineers. What part of your discipline do you see changing the most or the fastest in the next few years, and would be required for the next generation? On the spectrum of local to global, where do you see yourself practicing? You know about transition - can you determine what the energy mix is going to be in your community (whatever scale you see yourself at) when you are at the height of your career (say when you are between 40 and 55)?
Just like in school, do the research that will aid you the most.
I would like to have a part of that project.
