The Engineering Stree/Strain, true stress/ strain are normal values one get from tensile data. What other material properties can be obtained from tensile data?
The typical other material properties you get are the modulus of the material (usually the Young's modulus if your specimen geometry is applicable) and the Poisson's ratio.
In case you got to do specific test as in fracture mechanics you would also get fracture toughness / critical strain energy release rates when testing notched members.

But how one gets strain energy release rate from flat tensile test specimen? Please elaborate.
You just stated "tensile test". To get the strain energy release rate you would need specific derivatives of tensile tests for notched members, such as recommended by ASTM E399 for metallic materials.
For a "classic tensile test" this is not applicable.
strain hardening exponent, strain rate sensitivity, toughness, reslience are few more what you get .
