I am currently carrying out a research on a similar issue. May be my approach may interest you. My own crop of interest is wild under-exploited legumes. I emphasize on the word under-exploited because there is relatively no documented utilization about them. Many under-utilized crops at least been used by very few communities. I explained this better in my recently published article:

So my approach is to survey different varieties of them, Plant then in a farm and evaluate their genetic variations and characteristics. Then invite experienced farmers who have experience in growing similar or closely related crop. From the farmers, you can survey and get their previous & present views, perceptions and possible uses they think. With these information you can have have the various uses of these and try to exploit each one in the most preferred uses mentioned by the farmers. Some uses have already been mentioned by Dr. Panghal. And you can now project to domesticate them in case they are not domesticated and promote their utilization and of course after a thorough biochemical investigation of their constituents.
