I've been using the raw kernel of Cocos nucifera for formulating an o/w emulsion with soybean lecithin (milling, ultrasound processing, and filtration). Based on the literature, there is a 7% approximately of coconut fat on the mixture, so I add 4% of soybean lecithin and 1% of xanthan gum. The problem is when I incorporate the resultant emulsion on 100% water coagulates forms after 24 h, and I'm searching for a compatible formula on water.
