Please do not mix biology with programming. What you need are good (reliable) statistical methods. Those, in turn, are efficiently already implemented in many programming packages, written in various languages. Look for 'hypothesis testing' first of all (not in software but in literature) and then it may appear that familiar spreadsheet-type programming tolls are sufficient. But the most important is good, deep understanding what is being calculated.

I would foremost suggest you to decide that the question is and what you are asking. Define you study question. You said you find to find a dataset. That means you currently have nothing in your hand. Marek Wojciech Gutowski is correct, but I see there is a lot of things for you to do before you can follow Marek's advice.

Furthermore, omics is not bioinformatics, at least as it appears in your question. You also need to reconsider your definitions of omics, bioinformatics and programming language.

And as you ask what you can do to learn. There is a one word answer to your question, "GOOGLE".

Google anything you wanted to learn from respective discussion topic, and I am sure there is immense amount of material available which you can use to learn.
