there are many methods to evaluate deformed and rex. area. even optical microscopy can help you on that. simple way is hardness measurement while hardness in deformed area is much higher than Rex. area.
there are also more precious method like EBSD and TEM. the dislocation density difference is clear in IQ map of EBSD.
You can always use EBSD. It might be a bit tricky with the light microscopy to distinguish though. You can check our following paper for compared microstructures of dynamically and statically recrystallised, recovered and deformed grains of aluminium from extrusion process. Regards.
