Hello. I have an ArcMap file which has a layer with my study area and a numbered grid overlayed on it. Both are in the same layer. I wish to colour code each cell on the basis of the built up area percentage of that cell. I want the end product to look like a mosaic of 3 different colours, since each cell would be coloured with one of 3 colours (to be chosen by me). Could anyone tell me how to do this?

Unclear, what you mean when you say you have two layers (study area and the overlaid grid layer ) and then that both are in a single layer. Do you mean there is a layer 'group' that has the two layers in it? As a note, 'mosaic' has a specific meaning, for instance when stitching together many overlapping remote sensing images ( see https://desktop.arcgis.com/en/arcmap/latest/tools/data-management-toolbox/mosaic.htm ), and I am going to guess it doesn't apply to this situation.
The other assumption is that the numbers in the 'numbered grid' ( all rasters / grids have all sorts of numbers associated with them, like row / column numbers, etc.) are 'percentages' ( floating point or integers? ).
There are two basic approaches, the first is to change the symbology ( see https://desktop.arcgis.com/en/arcmap/latest/map/working-with-layers/a-quick-tour-of-displaying-layers.htm ) and is similar to https://support.esri.com/en-us/knowledge-base/how-to-apply-the-same-symbology-to-multiple-rasters-in-000014408
The second is to 'reclassify' the data into a new layer ( https://desktop.arcgis.com/en/arcmap/latest/tools/spatial-analyst-toolbox/an-overview-of-the-reclass-tools.htm ) and use that for display.
You don't mention what specific version of 'ArcMap' you are using, etc. or how familiar you are with ArcGIS in general.
