While doing enzyme kinetics, we need to have molar concentration of substrate for carrying out Michalis Menten kinetics.
But in the case of starch, since it is a polysaccharide, molecular weight will vary according to chain length and thus the molecular weight.
So in that case, how to calculate value of [S]?
It isn't essential to have the substrate concentration in molarity. You can use mg/ml or anything else. The units of Km will be whatever units you used for the substrate concentration. The only problem arises when you have to combine two or more concentrations in the same calculation, such as for enzymes with multiple substrates.
