This is Johnny here. I am doing CFD simulation on mixing tank with different liquid heights .And I am using VOF multiphase model and SST k- omega model and I just want to know how can I calculate the time step size , number of time step and maximum iteration for transient case ?

You can refer to the journal papers related to the CFD simulation on the mixing tank, to get the details of time step size, number of time step and maximum iteration, etc. It will be mentioned in the numerical methodology section.
1) Time step: Its selection is generally based on CFL and for VOF, CFL < 1 (u*delta_t/delta_x
To achieve the optimal simulation time (Finish time), changes of turbulence energy vs time can be plotted and analyzed. In this diagram, if after a certain period of time the turbulence of the current during the simulation is reduced and t reaches a constant energy, it can be said that the flow has reached a steady state.
