I have a simple RC column modeled with Steel02 Material in OpenSees and I am trying to change it to Hysteretic Material (to see the degradation in my final graph). I want to have a three-line behavior and I know that the first and second points are (fy,ey) and (fu,eu) respectively, but I don't know how to calculate the third point. Does anyone have any tips or a source that explains that?

I am not sure if I understood your problem correctly but let me try to answer in two parts:
If you want to model a tri-linear curve for an RC section, you should extract the intermediate node from the moment-curvature analysis of that particular section.
If you want to go bilinear using Hysteretic, then the third node input is not necessary - it is optional (see the command manual page). However, it calculates a third node that coincides with the slope of your bilinear curve just for the code to work.

ASCE 41-17 provide modeling parameters (those 3 points) for most common elements. For RC columns, you can defined the third point of moment-rotation curve as (c*fy, ey+b) where b & c are calculated from equations in attached Table. But it should be noted that the axial of columns are preferred to remain elastic, as it would create problem if the axial strength capacity is lower than gravity load.
