I am fully aware that the question is quite broad, and yet do you know of any estimates of number of annual publications, let's say, in psychology? Or any other discipline belonging to social sciences? I am not interested in individual achievements, but rather in global numbers.

Scopus or Google Scholar could be a good source of info. Ask them whether they are able to provide you filtered (social science or specific discipline) information for selected period and you will get eveything you want. However, only more prestigious publications will be included. Alternatively, you can try to scrape such information from their websites.
annual publications could be obtained from specific publishers. Perhaps you might want to narrow your search to some specifics.
What distinguishes the academician from the teacher is that he becomes productive by publishing. In my view, although there is no measure of this, at least one publication per year is suitable for efficiency.
For individual researchers, perhaps three publications in high impact journals might be reasonable.
