I need to use snailase enzyme and there is no activity mentioned on the bottle, so i need to determine it in lab.
Snailase enzyme is probably mixture of cellulases, hemicellulases and amylases variety so you may try with substrates and method of the above enzymes.

Snailase is mixture of enzymes. Activity cannot be defined on the whole for snailase.
Snailase, also called helicase, extracted from crop and digestive tract of snails, consists of more than 30 enzymes, including cellulose, hemicellulase, seminase, N- acetylglucosamine, lactase, galactase, proteolytic enzyme, pectinase, catechol -o- methyltransferase, sulfatase, amidase, decarboxylase, depolymerase, β- glucuronidase, phenol sulfatase, xymohexase, sucrase, esterases, tetrazole oxidase, etc.
specific to the substrate you can define the activityr.
It is now used for hydrolysis, digestion and conversations.
No literature is found with specific substrate and conditions so far (searched in google scholar and web of science)

you mean that I used mixture of all substrates , I think it is difficult as snailase mixture of about 20 enzymes.
and if I use one substrate for example cellulose then I determine the activity of cellulase found in snailase not snailase.
