The traditional way followed was the use fo liquid nitrogen but later different studies showed that aquenching in liquid nitrogen results in the formation of an insulating layer of nitrogen on the surface which traps the heat and thereby leading to undesirable results. Therefore the best way is to use a freezing mixture or more simply use distilled ice water.
