I did quick preliminary solubility study on my flavonoid enriched extract in oil and water phase. I found my extract is more soluble in water. Prior this study, I thought my extract is oil soluble drugs so originally I wanted to do oil in water (o/w) nanoemulsion. With this result, I need to change the plan to water in oil (w/o) nanoemulsion. However, I am having difficulty for my later study on the immersion of this w/o nanoemulsion in water for my aquatic animal study. If this case, is it possible for me to develop water in oil in water (w/o/w) nanoemulsion in order to overcome the issue. May I have other suggestions or opinions for this matter. Much appreciated. it will be difficult to dissolve water in oil emulsion in water as Ur continuous phase is oil. you can dissolve that in oil easy.
If your extract is soluble in water why do you need an emulsion? Can you just make a aqueous solution?
